I'm a sucker for subclasses (and I'm mainly a DM!)
I also voted spells and rules variants/additions.
I almost voted Monsters/NPCs but I currently have more than enough monster books. Of course, if I'm being honest, as soon as a new shiny one comes out...
 

I picked Species (Races), Subclasses, and Monsters/ NPC's.

I put monsters in bold print because I have always liked seeing what kind of monsters the RPG companies came up with, be they an adaptation of some monster in RL mythology or something from the 'twisted' 😋 minds of the RPG design staff. Pathfinder 1st edition's 6 bestiaries are full of the former, for instance. :)

Subclasses are a neat way to explore the various aspects or niches of a particular class.

The number of species you can play as in a RPG is a bit of a Goldilocks issue. At the same time, however, they do offer you another opportunity to be something else for a little while. ;)
 

I've got three sets of answers to this question. What I like as a player, what I like as a DM, and what I like to read for reading's sake (i.e. entertainment).

I guess I'll answer as a player, because that's what I do the most right now.
