Based on some interpretations, I'm going to assume it's an Awakened Plesiosaurus.

But does the Loch Ness Monster have class levels like Druid or Ranger? Also what does it need 350 for?

I'd go for assassin with an oriental flavor. Because what would be more awesome than a Ninja Assassin Loch Ness monster? It would also explain why so few people that see him live to tell their story.
