Nothing. The only reason I can imagine making them fey is that you can then imagine they come from the Feywild instead of a planet of their own, and this edition of Spelljammer doesn't seem to want to have planets with sentient beings on them.What about the Dohwar is fey other than them being labeled as such? I don't see this as a problem, and would prefer if they were all still outsiders.Problem with that is Outsider also covered a lot of other things - fiends, modrons, slaadi, rilmani, and lots of other Outer Planar creatures.
