Remember that the end of Wandavision had her pouring over the Darkhold, while the voices of her children seemed to call to her from whatever netherworld they'd returned to. They clearly didn't survive as typical corporeal entities in our world.

This is aligned with the standard comics version of events, in which Wanda got two souls for Billy and Tommy from Mephisto's realm (actually, it is more complicated than that, but let's not go into it, since they probably aren't using the complication in the MCU), and after they are dissolved, their souls go back. Eventually to be reincarnated as Wiccan and Speed, due to the imprints Wanda's magic left on them.

Okay, fine. We'll get into the complication.
In Marvel Comics continuity, Mephisto is a Faustian demonic character. In the comics, he runs a version of Hell - he's the Devil, or close enough for government work.

Mephisto had an encounter with Franklin Richards, the son of Reed and Susan Richards, of the Fantastic Four. Franklin's a kid, but cosmically powerful. Mephisto got the worst of it, and five hunks of his spiritual self (call it his "soul") were broken off.

When Wanda created two kids for her and Vision in the comics, her magic used two of those pieces of Mephisto's soul to animate them. When the kids dissolved, those pieces went back to Mephisto.

Unfortunately for him, those pieces of his soul were so strongly imprinted by Wanda that they didn't fit any more - they temporarily destroyed him, got loose, and were reincarnated as Billy Kaplan and Tommy Sheppard, the superheroes Wiccan and Speed, respectively.

So, that's why everyone keeps mentioning Mephisto in the context of Wandavision.

It certainly does! I wonder if figuring out who the person is and being able to say their name undoes the sigil. I can’t remember if that’s as already explained or not.

Thanks. I thought maybe it had been discussed but couldn't remember. So saying his name won't get rid of the sigil. You have to use magic to do it. Now that Agatha has Alice's magic, I wonder if she can do it, or if there's a specific way sigils are destroyed.

Sounds like it's the opposite to me. Once you figure out that Teen is Billy Maximoff, or perhaps just identify him as "Wanda's son" (though Agatha should be aware of the children, seeing as she babysat them and stuff), there is no longer any need for the sigil and thus it will self-destruct.
