I was gonna say, "Because you want to play a different race?", but then I saw the "mechanical" part of your post, so I'm assuming you're looking at optimization. There are two candidates I can think of off the top of my head, for mechanical reasons.

1. halfling (the monk's mobility makes up for the detriment there, and the lucky trait is just downright awesome. I can't tell you how many times that's made a difference)
2. human (my own monk is human, because you get that feat. I selected magic initiate with a hex spell. Hex + flurry of blows is downright dangerous.)
 

If your highest stats are both odd, you might as well go Variant Human so you can take the Mobile feat and be the awesome flying human missile from level 1. 2 attacks per turn, never get hit in return*.

*For some values of "never" which exclude missile attacks, because hey! you're still only first level.
 



I have build me an Half-Elf Monk (with Entertainer Background to make her a belly dancer), since I was interested in playing the social character in the group. Overall I have to say, that I think the monk has not much that the class provides for the rest of the party. Sure, the class is very self-sufficient and the Wood Elf even enhances that, but that is not enough for everybody. So, there you have one reason why not to take that race for monks.
 


I think every rule is optional. if you are going to play an elf campaign then every human is not "core".
One of my players is playing a wood elf monk. with the elemental something archetype. the truth is that, fortunately, this group enjoys non-combat play, so I'm not sure if they are optimized or not,we have fights, tons of them, but I'm not sure.

since this edition doesn't make you choose your race in order to maximize your class you can pick any race. Still there are good choices.
Halflings have their luck. that's powerful.
human are a good choice as always for reasons.
Wood elf give dex, you have to boost Dex but not necessary the same way that previous editions.
