What non-treant treants are there?

The Complete Guide to Treants gives an excellent overview of their society- they treat the forests as huge, very long term bonsai projects. There is an underdark version mentioned in the book that cares for the fungal forests below, but what tends the plains, the oceans, rivers and lakes, the arctic and deserts? I know of the cactus version of treant in Sandstorm, but that seems like defender rather than a tender.

I don't know about that tome per se (most of these compedium books do not impress me very much), but IMC there's some beings quite similar to Treants called Ents, and also Ent-Wives.

I would think creating other templates for living trees would be extremely simple. Take a tree or tree type plant in any environment (a radical one would be a giant piece of coral), and give it consciousness.

From there, variations are pretty straightforward, and in many of these publications, not too imaginative. You'll have the Aberration Treants, the result of the obligatory mad wizard's experiment of adding ichor of demon and essence of black pudding to an Ent's DNA. Etc. Treant Liches. Treant half-dragons. Beholder fruit tree. Treant Vampires. (gawd, this is so easy its rather boring) Treant Dinosaurs. Pixie-forged Treants (ahhh...the existential angst!) Treant Bullettes. Tarrasque Treant (the more absurd the combination, the better) Treant Fire Elemental. Treant Fire Giant.
 

I think the books you might be speaking of are The Two Towers and The Return of the King by JRR Tolkein.

As for slapping a template onto a treant to get another plant tender, I don't think that works well in tree-less plains and deserts, much less the open ocean.

Black Willow
Hangman Tree
Retch Plant
Twilight Bloom
Kampfult - see Tome of Horrors
Quickwood - see Tome of Horrors
Killer Tree - 6 HD, grapples with branches and swallows (OD&D/Mystara)
Noran - 9-HD, looks like a petrified treant, fires rocks from its mouth (Dragon Mountain/Monstrous Compendium Annual 1)
Tree, Singing - 12-HD lures creatures in with its singing to fall asleep, then drains blood (Monstrous Compendium Annual 1)
Bohun Tree - 10-HD NE "tree of death", shoot thorns, poisonous fruit, roots constrict, all-around vision (Dragon #89)
Clubthorn - 6-HD relative of holly tree has roots that entangle, and clubs with wooden limbs (Dragon #167)
Faerie Phiz - 10-HD creature, fey-like face appearing on enchanted wood, spit extinguishes flame and irritates skin, casts spells as both wizard and druid, has sagelike knowledge (Dragon #191)

also, in 3E books, there is the Ironmaw (FF), and Dark Tree (MoF) and probably others. :)

Into the Green by Bastion Press and Denizens of Darkness/Dread by Arthaus for Ravenloft have undead and corrupted treant variants.
 

Mythic Races by FFG has Tremen, a pseudo humanoid tree race that tends forests and Wildwood by Bastion Press has Thorns (I think they might appear in Plains of Penance as well) which are more viny type plant people with a distinctive druid bent.
