Wondering if I could cast polymorph spell on myself (I knownsays tsrget incan see - so I look into mirror). Can I maintain concentration on the spell while in beast shape. IE change into mouse so I can eaves drop on conversation in a private room

Yes. You don't need a mirror, as you can presumably see your hands or feet or whatever (it doesn't specifically require you to see the target's face). In fact, it would be up to your DM as to whether or not a mirror qualifies as "line of sight" (it's an interesting idea at the very least). And yes, there's nothing that prevents you from concentrating on the spell (I believe this was verified by the designers in Sage Advice).

Keep in mind that unlike a druid's wild shape ability, polymorph changes your mental ability scores to those of the creature's. While you do retain your personality, you'd have the effective intelligence of a mouse. Depending on how your DM rules it, that might mean that you don't understand much of what you're seeing (like a really young child listening in on a conversation between adults). If he's more liberal in his ruling, you might remember what was said and be able to put it into context once you are no longer polymorphed. If not, you might not understand or remember much about what happened. Or he might ask for Intelligence check. I recommend discussing this ahead of time with your DM so you know what to expect.
 

Also note that polymorph is a concentration spell and you need to make a constitution save if you (even in polymorphed form) take damage. I find that the spell is more effective on party members than yourself.

Also note that polymorphing an enemy into a tortoise or newt (watch for the monty python references) is a lot of fun if you can pull it off.
