Necklace of Adaptation: This necklace is a heavy chain with a platinum medallion. The magic of the necklace wraps the wearer in a shell of fresh air, making him immune to all harmful vapors and gases (such as cloudkill and stinking cloud effects, as well as inhaled poisons) and allowing him to breathe, even underwater or in a vacuum.

Does such a necklace protect against a Gorgon's breath weapon?

Breath Weapon (Su): 60-foot cone, once every 1d4 rounds (but no more than five times per day), turn to stone permanently, Fortitude DC 19 negates. The save DC is Constitution-based.

A typical gorgon stands over 6 feet tall at the shoulder and measures 8 feet from snout to tail. It weighs about 4,000 pounds.

Gorgons are nothing if not aggressive. They attack intruders on sight, attempting to trample, gore, or petrify them. There is no way to calm these furious creatures, and they are impossible to domesticate.

COMBAT
Whenever possible, a gorgon begins an encounter by charging at its opponents.

Trample (Ex): Reflex DC 19 half. The save DC is Strength-based.
 

Could be argued

Going strictly by the SRD no, but the SRD also pulls all flavor text. The breath weapon of a gorgon in the SRD is merely

But the flavor specifies its a cone of GAS that the gorgon breathes and the necklace protects against
all harmful vapors and gases (such as cloudkill and stinking cloud effects, as well as inhaled poisons)
. Therefore both as player and DM as far as it goes IMC I'd rule it protects since it's a magical vapor that I presume works on contact. With the necklace of adaption it can't contact the target.
 

A necklace of adaptation doesn't protect against all breath weapons, nor does the Monster Manual text or illustration make it explicit that the gorgon breathes out a vapour or gas - it could be a cone of dust. However, unless the GM has a more specific reason to rule in that way it would be reasonable to say that the necklace protects against a gorgon's breath.
 

I agree it doesn't protect against all breath weapons, or even most of them. It rather specifically protects against gases and vapors. Honestly I don't think I've used a gorgon since 2e anyway that I remember. Thing is I recall the breath weapon of a gorgon being described in one of the old books as a billowing cloud of sickly green vapors and didn't figure they'd bothered to change it. But I got rid of most of the 1e, 2e stuff several years ago and don't have it to go back and look at.

If wrapped in a shell of fresh air that is sustained even under water or in vacuum I wouldn't think it able to make contact with the protected character.

I wouldn't have any problem ruling that a "shell of fresh air" protects against a cone of dust, as well.
