So... What are the downsides of these classes?!?!

Sheesh. To think, in another thread, I asked if there was problem with third party d20 publishers putting out "power creep" supplements...

You have to realize both classes are of the category that are designed to help fix a broken multiclass combo.

The Eldritch Knight has a lower HD than the Fighter as well as less feats and has less spellcasting levels than the Wizard. Compared to a Fighter/Wizard he has more spellcasting with a little less Fighter. Overall, he works pretty well.

The Mystic Theurge is the more often debated one. But really, in that case, you're giving up high level spell progression for more versatility. I doubt either is really overpowered (and I believe the Knight is actually held as underpowered by many)

So a Mystic Theurge needs at least 3rd level in each of a divine spellcaster and an arcane spellcaster, right?

I guess the main limitation of a Mystic Theurge is, now that Haste has been reduced in power, there's no more Hasted Quickened spells, so no more than two spells per round (and, having lost at least one and possibly two spell-levels of spell slots, they couldn't Quicken too high a spell, anyway).

Haste has been limited to no longer working on spellcasting, right?

Correct. And note that the Mystic Theurge has even worse skills than a Wizard, a d4 HD, Wizard BAB progression. I forget his saves, but he doesn't gain anything in terms of Familiars, Bonus Feats, or Undead Turning.

Even when he CAN cast two spells a round, normally they're still a level behind the single classed caster.

Their real power is that they have a TON of low level spells (assuming they have a good score in BOTH of the spellcasting stats)

The only Mystic Theurge builds I've seen that are really worth it are Sorceror/Water Shugenja/Mystic Theurge. Since most people only allow OA material for OA games, they're not too common.

As for the Eldritch Knight, I'm sorely disappointed that it does not have a Spellsword-style ASF reduction. I think that would make a reasonable substitution for Fighter bonus feats, if you left out the Spellsword's other abilities.
