D&D 5E Monsters that attack stats

I don't have my 5E MM to hand and my curiosity has been piqued. Shadows damage Str and Intellect Devourers damage Int, but what about the other stats?

The hydroloth's Steal Memory temporarily reduces Intelligence and Charisma:

"On a failed save, the target loses all proficiencies, it can't cast spells, it can't understand language, and if its Intelligence and Charisma scores are higher than 5, they become 5."

Attacking stats is basically sacrilege, IMO. It's as if a player character had a power that would force the DM to give up his share of the snack bowl.
Actually it's the opposite, players have the power to temporarily reduce a DM's Intelligence by bringing them free beer, and can permanently damage a DM's Constitution by supplying free snacks.

I know its sacrilege, but I have wondered if a system where instead of HP a critical hit allowed called shots against Con (bleed wounds), Dex (leg wounds) Str (limb wounds) and Wis (Head wounds) might work. Players could reduce wounds by taking a consequence (stunned, deafened, blinded, bleeding etc)
