The text of Mind Spike reads in part "if it's invisible, it gains no benefit from that condition against you." So what are the benefits of the invisible condition?
  • An invisible creature is impossible to see without the aid of magic or a Special sense. For the Purpose of Hiding, the creature is heavily obscured. The creature’s location can be detected by any noise it makes or any tracks it leaves.
  • Attack Rolls against the creature have disadvantage, and the creature’s Attack Rolls have advantage.
So to not have those benefits should include that the creature is possible to see without the aid of magic or a Special sense. Therefore, with Mind Spike, if the creature can be seen normally by me while I am concentrating on Mind Spike, I see it. I can thus target it with further spells that require I see it.

I agree with your interpretation. The spell would be easier if it simply said "you can see the creature even if it is invisible".

There are a bunch of features like AOOs that you have to see the creature to do them (not simply know where they are), it would be easier to interpret if it just allowed you to see the target.
