How did the Quori use the warforged (Quorforged) and did they make other constructs ?

The Quorforged were never intelligent. The current, sentient Warforged are something wholly different from the ancient designs used by the Quori of the previous age. The Quori wanted to escape destruction at the turning of the age, and so they built Quorforged bodies and Docents in which they would store their spirits. The rebel Quori no longer have a physical presence. Instead, they exist within the collective subconscious of their Kalashtar descendants. It could be said that the rebel Quori act as the "nature" part of "nature vs. nurture" in a Kalashtar's life. Now, The Inspired, on the other hand, are vessels that have willingly allowed their bodies to be possessed by Quori spirits that directly control the host body.

Yes. I see it as the same relationship the modern quori have with the Inspired. The body is capable of autonomous action on its own (though IIRC the Quorforged aren't sentient), but when the docent is plugged in, it's fully in control.

And if so, how different are the current Warforged with regards to this means of control?

By what's been said and shown in the novels, the Quori docent doesn't displace the warforged personality. However, there's no proof hat it COULDN'T - which means, at the end of the day, it's up to the DM.
