Those are fine and all, but they don't cover all scenarios. If your player Polymorphs a creature it no longer has Elite Recovery to fall back on, for instance. I kind of like how BG3 handled it: instead of choosing to succeed, the Legendary Resistance adds 10 to the save result.
If that is really needed (I mean sometimes the players just win right), you have:

Immutable Form. The golem is immune to any spell or effect that would alter its form.

It doesn't even effect the monsters CR!

The other thing I do with a lot of my monsters is give them more saving throws. many in the MM have 0, I give most at least 2 and many 3-4. That is already adding a good bit to the save.

Yeah it kills me that so many monsters don't have proficiency in saves. It's still largely true in A5e's otherwise amazing incredible MM.
I wonder if KP's TotV Monster book is any different...

Honestly, having played spellcasters in many games where enemies almost always make saving throws, it was actually refreshing to have my spells work fairly often.

Except for sacred flame, of course. I don't know what the problem with that spell is, I think it's cursed.
I'm definitely an outlier because my games are mostly A5e nowadays, but the most common saves my monsters are making are against martial Maneuvers. The characters have several ways to raise the DCs of those maneuvers and some of them can be more devastating and used more often than spells 😅

Since this thread is about TotV, martials in there also have things akin to maneuvers they can do that'll force saves!

From online video looks and the playtests, The books are beautiful and there is a lot I like. I like race being replaced with Lineage and Heritage. I also like the changes to backgrounds (even if not some of the name changes), Talents, multiclassing remaining optional, and some other things I like as well.

However, I am not a fan of subclasses at level 3, non-class specific spell lists, the Mechanist, boosting non-spellcasters rather than toning down the spellcasters (although, I do like some of the new additions for non-casters). I would have also preferred ability scores being listed with monsters rather than just ability score modifiers.

I will give another look, if KP releases a product that
  • adds new lineages: Bearfolk, Centaurs, Lizardfolk, Minotaur, Ratfolk, Ravenfolk, Shadowfey, Trollkin, Jinnfolk, Werelions. I would include both Gnoll and Dryad, but they are on the KP website;
  • breaks from 5e's reluctance to add new classes and adds new classes based upon the classes in their Pathfinder New Paths Compendium (Battle Scion, Priest, Spell-less Ranger, Savant, Spirit Shaman, Theurge, Trickster, White Necromancer);
  • adds: new domains and subclasses; and
  • adds optional versions of the classes (or variants) with subclasses at first level.
