FYI, per the DMG a monster can have up to 2 saves and have no effect on the CR. 3-4 saves = +2 to AC*, and 5-6 saves = +4 to AC*. So I almost always give them at least 2.

The other thing I do with a lot of my monsters is give them more saving throws. many in the MM have 0, I give most at least 2 and many 3-4. That is already adding a good bit to the save.
If that is really needed (I mean sometimes the players just win right), you have:
Immutable Form. The golem is immune to any spell or effect that would alter its form.
It doesn't even effect the monsters CR!
There are lots of ways to handle it and I have tried many. I think LevelUp as one of the simplest yet effect solutions.

I have had the same desire to use that mechanic and similar worries. I know PF2 uses the +10 / -10 mechanic and I don't hear a lot of complaints. Is 10 just easier math so it is easier to remember?
I like what they have, but I see your point as well. Not sure what the best answer is. I like the idea of moving through the horde, but how to simplify how that is expressed?
